Nicole's Spinach Salad

1/3 t. Dry Mustard
3/4 t. Onion
1/3 Cup Sugar
1/2 Cup White Vinegar
3/4 t. salt
1 to 3 T Poppy Seeds

1/2 -1 lb  Cooked bacon
1-2 Baby Spinach
1/2 -3/4 lb Grated Swiss
1 red onion sliced
1/2 - 1 lb mushrooms
1 head red leaf lettuce
1 cup cottage cheese

combine in bowl toss in salad dressing  before serving

Broccoli Salad

1 Large head Broccoli
1/2 Red Onion
1 Cup Seedless Red Grapes
3 Oz Sun Flower Seeds
1 Cup Crasins
5 to 10 slices of bacon or real bacon Bits

Mix above then add

1/2 Cup Mayo
1/4 Cup Sugar
1 Tablespoon Red wine Vinegar

Cheese sauce/Cindy Warner's

3 Tablespoons Butter
3 Tablespoons Flour
1 Cup Milk
Add Cheese

Heat all on stove and pour over vegy's

Chocolate Cake with a twist/Whitney

Take a box Chocolate Cake and bake when it comes out
Poor one Can of Condensed Sweetened milk
Poor one  Jar of Carmel over that and let cool
Then Put Cool Whip on top and Break a Health bar into tiny pieces and sprinkle over cake I put in the frig or freezer.

Easy and Yummy

Southern Fried Chicken

I start with Chicken Thighs (take the skin off) This is the best to fry
In a Bowl I put 1 cup Flour 1/2 tsp salt and 2 Tb.. Sugar Italian seasoning

In Pan I heat Olive oil (I use a big deep Frying pan)

Roll Chicken in Flour and put in Hot Pan and put lid on and fry on Med until golden flip over and repeat

After frying is all done take chicken out and use the remaining flour to make the gravy for the Potatoes, Mix into the pan frying with the drippings and add water salt and season to taste stir until thick and serve over chicken and potatoes I usually serve with Green Beans made country style.

Monkey Bread

3 ( 12 oz) pack of frig biscuits ( grands are best)
1 Cup White Sugar
2 tsp ground Cinnamon
1/2 Cup Margarine
1 Cup Brown Sugar

Preheat oven to 350 Grease Pan I spray it with pam

Mix White Sugar and Cinnamon in Plastic Bag, Cut biscuits with in pieces and put in bag with sugar and shake.  6 to 8 Pieces at a time work best then put in bottom of baking pan

In sauce pan melt the margarine with brown sugar over med. heat.  Boil 1 min and pour over biscuits.

Steak Marinade

1/2 Cup Olive oil
1/4 Cup Soy sauce
4 tsp steak seasoning ( Montreal Steak seasoning)
2 lbs steaks

mix and let sit for 3 to 4 hours or more if needed.  Makes the steaks yummy

Dressing for strawberry spinach salad

1/2 cup veggie oil
1/4 cup white vinegar
1/4 Cup sugar
1 TBS Poppy seeds, sesame seeds
1/4 t paprika
1/4 t salt
good on

Snicker Doodles

3 3/4 cups Flour
1/2 tsp baking soda
1/2 tsp cream of tarter

Sift above and set aside

1 cup butter
2 cups sugar
Cream above together

2  eggs  add 1 egg at a time to butter and sugar above and then add milk and vanilla then slowly add the flour mixture.  Roll in 3 TbS sugar w/1 tsp cinnamon

1/4 cup milk
1tsp vanilla

Hot Fudge Laura Yummy

10 TBS Butter
6 TBS Coca
2 Eggs
1/2 Cup boiling water
1 tsp Vanilla

In a Double Broiler on low heat 4 or 5
melt butter add coca then blend in Sugar beat egg slightly before you add stir swiftly add 1/2 cup water
stir well turn down Low cook 10 min add vanilla

Hot Artichoke Dip

Mix in Oven Safe Dish
1 cup mayo
1 cup Shredded parm cheese
1 can water packed artichoke, Drained and slightly chopped
2 small cans diced green chilis

Bake at 350 for 30 min let cool and stand for 10-15 min before serving
Good with wheat thins

Golf Ball Cookies

1 1/3 cup Gram Cracker Crumbs
1 1/3 cup pecans
1 cup peanut butter
1 cup coconut
1 box powdered sugar
2 sticks melted margarine
1 12oz pack cho chips
1/2 block Parafin Wax

Peanut Butter Cookies

1/2 cup Margarine
1/2 Cup Peanut Butter
Cream together

1/2 Cup sugar
1/2 C. Brown Sugar
Add to above and cream

1 egg
1 tsp vanilla
Add to above and Beat well

1 1/2 Cup Flour
1 tsp Soda
Sift and add to above

Shape into Round Balls  Bake at 350 for 10 min Press a kiss into the center

Christmas Breakfast casserole

8 slices White Bread
2 Cups Mild cheddar cheese
1 lb Jimmy Dean Sausage Maple
4 Eggs
2 1/2 cups milk
1/4 t. dry mustard
1 can cream of mushroom soup and 1/2 can milk

Overlap slices of bread in  9 x 13 glass dish.top with grated cheese, put cooked sausage
Thoroughly mix together eggs milk cover with foil and refrigerate over night.
In the morning whisk together soup milk and drizzle evenly overtop Bake covered @ 300 for 1 hour 15 min or 1 1/2 hours serves 8-10

Marcia's Avocado Salsa

2 Avocados
4 tomatoes
4 green onions
1 handful cilantro
1 can white corn
1 can black eyed peas
1 1/2 pkgs italian dressing
salt and pepper
2 cloves garlic

Corn pudding

1 can corn
3 TBS butter
3 Eggs
1 1/2 C. milk
Salt to taste
3 TBS flour
1/2 Cup sugar

Melt the Butter, mix flour and Corn in baking dish. Mix all ingredients and bake at 400 for 30 min Stir once at end of 15 min

Strawberry soup

1 1/2 cup water
1 1/2 cup sugar
2 TBS Lemon Juice
1 stick margarine
Boil 15 min
puree 1 quart strawberries put in pan stir often boil 10 min remove put in Fridge 3 days

mix 1/2 cup Whipping Cream
1/4 Cup Sour Cream
mix and add to soup after 3 days

1/2 Cup Butter
2    Cups peanut butter
3    Cups confectionary sugar

12 oz Chocolate chips
1/8 bar parafin wax
Only double make and put on wax paper

Crab Dip

8 oz Cream Cheese softened
1 Cup Sour Cream

2 Tbls Scallions-Green onions
1/2 tsp Worsteshire sauce

Louis kemp crab delight (snow crab)
8 oz 1 pk. flake and add to above
1/2 cup Pecans sauteed in Butter
Put into lightly covered glass dish
Take pecans and sprinkle on top bake 350 15 min

Crescent Delight

2 cans Crescent Rolls put 1 can onto greased pan
1 28 oz cream Cheese
1 cup sugar
1 egg white
1 tsp vanilla

Spread 1 can on greased pan in bowl mix cream cheese sugar vanilla pour on top of cresant roll
top with remaining cresant roll bake

Cream puff filling

1 Box of Great Value French Vanilla Pudding mix
1 1/4 Cup of whipping cream
1/3 cup sugar
1 tsp. banilla
Mix the pudding mix together with the amount of milk called for the recipe minus 1/4 cup

Whip the cream to soft peaks, and then add in sugar and vanilla, continuing to whip until very stiff peaks form.  Do not over whip or you will end up with butter.  When this step is complete, fold in the prepared pudding and mix together gently spoon into prepared pastry shells.  Drizzle the following topping onto the outside of the filled shell

Topping
Melt 1 12 oz package of semi-sweet or milk Chocolate chips over low heat on the stove Add
1/3 to 1/2 cup heavy whipping cream to this mixture to form a soft,spoonable consistency.  Drizzle
onto the top of the cream puffs.  If the mixture seems too stiff to drizzle, add more cream.  Do not substitute milk for the cream it will not work
Makes about 10-12 puffs

Cream Puff Dough

1 cup water
8 TBS Butter
1/4 tsp salt
1 1/4 Sifted all Purpose Flour
4 Eggs

Preheat oven to 425.  Lightly spray cookie sheet with vegetable pan spray or line with parchment paper
Place water, butter and salt in medium saucepan and bring to a boil.  Lower the heat, add the flour all at once; continue to cook, stirring constantly until the mixture leaves the sides of the pan and forms a ball.
Remove from heat and let the mixture cool for 5-10 minutes.  It will still feel hot but you should be able to hold a finger in it for a few seconds.  Transfer the dough to a mixer and beat in the eggs one at a time, making sure each egg is well blended before adding the next.

Spoon out approximately 1/4 cup dough for each cream puff on to cookie sheet.  Allow at least
2 inches between each puff for spreading.  Bake 15 min and then reduce the oven Temp to 375 and bake for an additional 15 minutes.  Turn off the oven, open the door a crack, and leave the pastry inside to cool for 30 min.  Remove from the oven to cool completely.  Carefully split the pastry, Fill and frost as desired.  Fill with cream puff Filling or whipped cream as close to serving time as possible to prevent cream puffs from getting too moist

Cole Slaw Cabbage Crumble

1 Top roman
In Bowl
1 season mix from Top Roman
1/2 Cup Vineger
1/2 Cup Water
1/4 oil
Sugar
Mix cut up Green onions and add

Vegetable Casserole

1 Bag (16 oz) Broccoli, cauliflower, Carrots Combo thawed and drained
1 Can Cream of Mushroom
1/3 Cup Sour Cream
1/4 tsp. pepper
1 can 2.8 oz Durkee French Onion (Dried)
1 cup (4 oz Shredded Swiss cheese

Combine Vegy's Soup and 1/2 Cup Cheese, sour cream, pepper and 1/2 can Onions
Pour into 1 Qt. Casserole
Bake covered at 350 for 30 min, top with cheese and onion bake uncovered

Audrey's Carmels

2 Cups White Sugar
2 Cups Cream, Whipping Cream is fine
1 3/4 Cups Karo, Light corn Syrup
1 Cup Butter (use only Butter)
1/4 tsp Salt

Mix all ingredients except 1 cup of Whipping cream in Sauce Pan (heavy) Bring to a boil, Boil on
Med for 25 min.  Add 2 cups Cream, Boil to med firm Stage.  ( I just drop a little of the carmel mix into
a cup of cold water and see how firm it gets.  When it is how I want Carmel's then it is done.
Pour into 9 X 13 Buttered Cake Pan.  Let Cool cut into small squares and wrap into small wax paper

Sweet Potatoes Thanksgiving

3 Cups Mashed Sweet Potatoes
1/2 C. Sugar
1/2 C. (1 Stick Margerine
2 Eggs
1 tsp. Vanilla
Mix together & Place in Place in Greased dish

Topping

1 cup Brown Sugar
1 cup chopped nuts
1/3 cup flour
1/3 cup Margarine
1/4 tsp. Cinnamon
1/4 tsp.  Nutmeg
Mix and spread over top Bake 30 Min @ 350

Strawberry Pretzel Salad

2          Cups Pretzels,
2/3       Cups Margarine at room Temp
3TBS   Sugar

Mix and press into 9 x 13 dish Bake at 350 for 10 min and cool

In Bowl mix

8 oz cream cheese
1 C. Sugar
9 oz Cool whip
Mix well and spread on Pretzel

6 0z Strawberry Jello
2 Cups Water
1 Pt. Frozen Strawberry mix (Birds Eye)
When Congealed spread on cream cheese and chill

Ham Glaze (So Good)

1/2 Cup Brown Sugar
1/2 tsp Dry Mustard
2 TBS Orange Juice

Double if desired
Mix and put on ham bake

Panang Curry

2 Cans Coconut Milk-(use light if you like)
Pannang Curry Paste 1 1/2 TBS
Brown Sugar 3 TBS
Fish Sauce 2 TBS
Peas
Lime Leaves
Sweet Basil :Leaves
Water to make less thick

Bring coconut milk, Curry Paste, sugar, Fish oil, to a boil simmer.
Next add Meat peas Lime Leaves Simmer 10 min
Serve over Rice

Black Bean Soup

2 C soaked Black Beans           2 C Cooked Chicken
Carrots                                      Onion
Celery                                       Lawy's Seasoning Salt
Garlic                                        Red Pepper

Add everything to crock pot, cover with water, let cook all day.  Adjust Seasoning to taste

Savory Chicken

Chipped Beef- two pks

2 cans cream of chicken soup
1 container 8 oz sour Cream
Mix

Line bottom of 9 x 13 pan with Beef take chicken Breast and wrap Beef inside 1 slice chicken
1 slice bacon and wrap around chicken-

Cover with Tin Foil bake 350 for 1 1/2 hour or more serve over rice

Lima Bean and Ham bone Soup

3     Cups Baby white Lima Beans Uncooked
3     Quarts water
Ham bone with ham
2 tsp. Salt
1 tsp. pepper
1 Tbs. Worcestershire   Sauce

2 onion peeled and chopped
1 Cup Celery Chopped
3 Tbs. Garlic Minced
2 Cups Chopped Carrots
3 Tbs Parsley
2 Tbs Sweet Basil

Cook bean in 3 Quarts of water on Medium heat
with 1 Tbs Baking Soda for 20 min
Drain and rinse thoroughly.  Cook 20 more min with
1 Tbs Baking soda and 3 Quarts of water
Drain and Rinse thoroughly and fill w/ 3 quarts of water again
Add all other ingredients and cook on medium low for 2 to 3 hours

Cake Box Cookies

1 Box Cake mix any kind-I like Chocolate
1/2 C. Veg. oil
2 eggs

Mix all above and add Chocolate Chips bake 350 12 min

Peachy Pork

Pork Cut and Brown into square pieces
1 can Salsa
2 Tbls Taco Seasoning

Add  8oz Chunky Salsa
1/3 Cup Peach Preserves

Simmer 15 to 20 min  Serve over Rice

4-6      Chicken Breast Cooked and Chopped
4-6      Stalks of Celery finely Chopped
4-6      Green Onions
1-2       Cups Grapes cut in half
1/2        Cup toasted Almonds

Mix together with enough mayo to hold it together.  Put Almonds on at the end

Thanksgiving Potatoes

2 lbs  Bag of Hash Brown Potatoes
8 oz Sharp Cheddar cheese
1 can Cream of Celery
16 Oz Sour Cream
1/4 Cup Chopped onion
Mix all together
Bake 350 1 1/2 hours

Chicken Pockets

Bell Pepper Relish

1 small green pepper
1 small red pepper
3 green onions
1 small tomato chopped
1 clove garlic minced
1 Cup Shredded cooked Chicken

Chili Dressing

1 T Oil         1 T wine Vinegar
1 t.  Cumin   1 t. chili powder
1/4 t. salt & pepper
1 T Sugar

8 Pita's
Cheddar cheese Shredded

Prepare relish Combine with chicken in bowl
In small bowl make dressing Drizzle over relish and chicken mix

Sizzling Party Kabobs

1 1/2 lbs Chicken

Marinade

1/2 Cup Sliced Green onion
1 tsp Minced Onion
1/4 C Soy Sauce
3 Tbls oil
1/2 Cup beef Broth
1 Tbls. Wine Vinegar
1/2 tsp. Crushed pepper

6-8 Fresh Mushrooms
1 Red Onion
Bacon
Red and Green pepper

Mix Marinade and add cut up chicken let sit all day skewer and cook on grill yummy serve over rice

Spinach Salad

1/3 t.          Dry Mustard

Pork Chop Casserole with Potatoes

4 Center cut pork chops
1 sm. can mandarin oranges
1 sm can Crushed Pineapple
1 (6oz) box long grain wild Rice

Brown pork chops in frying pan.  Place uncooked Rice in bottom in bottom of an 8 x 8 baking pan.  Drain
liquid from oranges and pineapple into measuring cup add water to juice to meet liquid requirements on box of rice..Pour juice over rice.  Place pork chops on top of rice. Pour in fruit over pork chops. Cover and bake at 350 for 45 min

Chicken Cheese Biscuit Casserole

Chicken
2 T Margarine
1 T Flour
1 can Cream of Mushroom soup
1 can of water
Add above to a  Casserole dish.  Then mix in a bowl

1 1/2 C flour
2 1/4 t baking powder
3/8 t salt
4 1/2 T shortening
1/2 C Milk
Mix rollout grated cheese and roll up slice 1/2 " thick put on top of mixture bake at 350 until golden brown

Pork Chop Casserole with Potatoes

4 Pork Chops
4 Potatoes,
Sliced Onion
Salt and Pepper
1 Can Chicken gumbo Soup

Dredge Pork Chops with flour, salt and pepper
Brown in Sauce pan in Olive oil
Slice potatoes and place in Casserole dish
slice onions and place on top of potatoes
Put pork chops on top of onions
Pour Soup in dripping and then pour over everything
bake 350 covered for 1 hour

Potato Cheese Soup

1 Large onion
Potatoes
1/2 lb Velvetta Cheese
Milk
Butter to taste
Boil potatoes and onions until soft add Velvetta Milk and butter to taste

Kelly's Famous Angel Wings

3 lbs Chicken Wings
1 Cup Chicken Broth
1 Cup Sugar
1/4 Cup Soy Sauce
2 T Cider Vinegar
1 T Corn Starch
1 T Paprika
1/3 Cup Minced Fresh Garlic
1 T Oil
1 to 3 Jalepeno's
Bake Chicken Wings as directed
Heat Oil and Saute Garlic until golden brown add rest of ingredients and bring to a boil, Reduce heat to
1 1/4 cup then pour over Baked Wings

Nicole's Famous Chicken Noodle Salad

1 whole Chicken Cut in Pieces, and skin removed (rotisserie) is best
1 Box LARGE SHELL NOODLES
2 cups diced Apples
2 cups grapes, halved
1 can pineapple chunks drained
2 cups celery chopped
1/8 c. grated onion
1 cup Cashews
1 cup Kraft Coleslaw dressing
1 cup Mayonaise

Mix all together and chill

Liberty's Broc-Cheese

6 Breast chicken breast cooked and cubed
Frozen Broccoli (cook in microwave)steam
2 Cups Rice
Sauce
2 can cream chicken
1 cup Cheese
3/4 cup Mayo
1/2 cup milk
1 tsp Lemon Juice
Italian Bread Crumbs

9 X 13 Sray pan and layer Rice, Broccoli, chicken sauce, then Italian Bread crumbs Cook 350 Hour

No Peak Chicken

1 Box Uncle Bins Wild Rice w/Herbs
1 Can Cream of Mushroom
1 Can Cream of Celery
1 can Water
1 tsp Parsley
6 to 8 pieces Chicken
1 Package lipton Onion Soup
Combine 1st Five ingredients in Casserole
Put Chicken on top and sprinkle with onion soup Mix
Cover w Foil cook for 350 2 1/2 hours

Don't Peak

Linguine Tuna Salad

1 (7oz Pkg, Linguine, broken in Half
1/4 C. Lemon juice
1/4 C vegetable oil
1/4 C Chopped green Onion
2 tsp. Sugar
1 tsp Italian Seasoning
1 tsp. Seasoning salt
1 can Tuna Drained
1 pkg small frozen peas
2 firm tomatoes, chopped

Cook linguine according to pkg directions drain,
In Large Bowl, combine Lemon Juice, oil, onions, Sugar Italian Seasoning, and salt. Mix well and Add Hot Linguine, Toss add remaining ingredients.  Cover and Chill!

Harvest Chicken Chowder

2 tsp olive oil
4 onions Green
3 garlic cloves minced
1 lb skinless boneless chicken breast cubed
2 cups low sodium Chicken broth
2 Celery Stalks sliced
15 oz can pumpkin puree
12 oz can evaporated  skimmed milk
1/4 cup minced parsley
1 Tbls minced Fresh Sage or 1/2 tsp. Dried
1 t. dried thyme
Pepper
In Large nonstick saucepan, heat oil.  Add the onion + garlic: Cook Stirring as needed
until soft. Add broth, Celery& Carrot bring to a boil Reduce the heat & simmer, stirring as needed, until the chicken is cooked through and the vegy's are tender about 10 min

Taco Soup

1 lb ground turkey or lean ground Beef, Large onion chopped
1 pk Hidden Valley Ranch Dressing mix
1 pk Taco Seasoning
1 can each-----Pinto beans, Chili Hot Beans, Corn Stewed Mexican Flavor tomatoes and stewed tomatoes
Brown Meat and onions, drain- Mix, Hidden Valley Ranch mix with Taco seasoning into meat- Then without draining add the other ingredients

Simmer 1 hour

Corn Chowder

Cook 6 Slices of Bacon Set aside

Cook 1/2 Onion Chopped in 2 T bacon grease in large pot.  Add 2 stalks of chopped celery and 2-3 Cubed potatoes.  Cover with just enough water to cook for 20 min or until potatoes are soft.  Add 2 bay leaf while cooking.  Do NOT Drain.  Add 1 can Creamed corn.  Crumbled bacon, 1 C. Canned milk or half and half.
Add 1/2 cup cheddar cheese.  Salt and pepper to taste.  Heat but do not boil.

Clam Chowder

2 - 6 1/2 oz can clams
1 Cup finely chopped onions
1 Cups finely chopped potatoes
1 cup finely diced celery


  • Put vegy's in pot
  • Pour juice from clams over Vegys
  • Add enough water to barely cover vegy's 
  • Simmer over medium Heat 20 min
White Sauce
  • 3/4 Cup Flour
  • 3/4 Cup Butter
  • 1/2 tsp. Salt
  • 1 Qt Half and Half
Mix together add 1/2 tsp. Sugar Fold into vegy's 

Broccoli Cheese Soup

1 bag frozen Broccoli 20 oz
1 Bag frozen Cauliflower 10 oz
1 bag frozen Carrots 10 oz
1 tsp.   Cayenne pepper
1 tsp.   seasoning salt
5 tsp.   Chicken Soup Base Bullion works well
6 cups water
10-12 oz Velveeta Light cheese
Add all ingredients except cheese, into a pot.Cook 20-25 min.  Remove vegetables from the pot, a little at a time, and place in blender to puree.  Do not dump water out, this is used as your base.  Also, Vegetables may puree better if you put a small amount of the water in the blender with them.  After vegetables are pureed put them back in pot.  Cut cheese into cubes and drop in two at a time until melted.

Chicken Enchaladas

Boil eight Chicken and Chop heat the following until warm.

4 cans cream of chicken soup
1 large Sour Cream
3 cans chopped green chillies

Have a jar of mild pace picante sauce and 2 packages of shredded cheese

Dip corn tortillas into sauce and begin to layer in a casserole dish Start with dipped tortillas, then sprinkle with cheese then with chopped chicken in the middle add jar of Picante(optional)
continue to layer and bake 350 for 45 min until bubbly

Chicken Pot Pie

2 Pies
In pot cook Chicken or Hamburger add 4 or 5 cooked carrots you can cook with chicken 4 Potatoes diced
1 can Creamed corn, Frozen Peas

White sauce

2/3 cup butter
2/3 cup flour
1/2 tsp salt
1/2 tsp pepper
3 1/2 Cups Broth
1 1/3 Cup Milk
Mix and add to above

Eat as soup or put in Pie crust.

Lemon Chicken Bowtie Pasta

8 Oz Bow tie Pasta
4 perdue Boneless skinless chicken Breast
4 Green onions (sliced)
1 Clove Garlic (minced)
2 Tbs Wesson Canola OIl
1/8 tsp Cayenne Pepper
1 1/2 cups progresso chicken Broth
2 tsp Grey poupon Dijon Mustard
1/8 Cup Fresh Lemon Juice

Crock Pot Cream Cheese Chicken

1/2 Stick Butter
3-4 Chicken Breast  (boneless & skinless)
1 Package Italian seasoning dressing mix
1 can Cream of Chicken Soup
8 o Cream Cheese
In a crock Pot combine butter, chicken breast and seasoning.  Cook on low 4 hours or more until
chicken is done and can be shredded with a fork.  Add soup and cream cheese.  Continue to cook in crock pot until everything is combined well:  about 1/2 hour. Spoon over rice or noodles.

Wild Rice and Chicken Surpreme

1/3 Cup Chopped green Onions
1/4 Cup Melted Butter
1/3 Cup Flour
Salt and Pepper to taste
1 Cup half and Half
1 Cup chicken broth
2 Cups Chicken, Cooked and Cubed
3 Tbls Slivered Almonds
1 6 oz box long grain and wild rice

Prepare rice according to package directions Saute onion in butter until soft-add flour salt and pepper gradually whisk in half and half and chicken broth simmer on Med heat until thickened. Add chicken almonds and rice.  Put in 1 1/2 quart pyrex dish and bake at 425 for 30 min.

Chicken and Stovetop

In a 9 X 13 pan put cut up chicken or Breast

Put cooked chicken in bottom of 9 X 13 dish
1 Cup Cream of Chicken
1 Cup Sour Cream
If more sauce is needed add more soup

Pour over Chicken
1 box of stovetop for Chicken
Cook according to directions
wen done put on top of chicken bake 20 min @ 350

Serve with applesauce and Vegy's

Cafe Rio Sweet Pork

Roast (Pork)
1 Cup Herdez Salsa Casera
1 Cup Brown Sugar

Combine brown sugar and Salsa,  Over pork roast and cook until pulls apart (4-5 Hours in crockpot)

Shred and stir

Rice

2 Cups Water
4 tsp chicken bouillon
4 tsp minced garlic
1/2 bunch cilantro
1 can green Chillies
3/4 t. salt
1 T butter
1/2 onion
1 Cup rice

Blend cilantro green chillies, onion, and garlic together in a food processor with a little water.  Bring water, butter bouillon, salt to a boil.  Add mixture and rice simmer until done

Dressing

1 Buttermilk Ranch Dressing Packet (make as per recipe)
2 Tomatillos
1/2  bunch cilantro
1 Clove of Garlic
juice of lie
1 jalapeno
Use food processor to blend all ingredients well refrigerate.

Sour Cream Orange Rolls

1         Cup Warm Water
2         Package dry Yeast (6 tsp)
1         Cup Sugar
1         Cup Sour Cream
4         Eggs
6  1/2  Cups Flour
12 T    Melted Butter

Stir Yeast into Warm water, Add sugar, Sour Cream, Eggs, Melted Butter, Salt and 4 cups Flour
Beat Well then gradually add enough flour to make dough soft  Let Rise till Double

Knead Dough to Remove excess air.  Divide into 2 Parts.  On a lightly oiled surface Roll each part into
12 wedges
Starting at the wide end roll int crescent roll, place on greased baking sheets and allow to rise 10-15 min

Glaze
Combine 1/2 Cup Sugar 1/2 cup Sour Cream 2 Tablespoons orange juice in sauce pan Bring to a
Boil over med heat

Waffles

3 C         Whole wheat Flour
1 1/2 t.    Salt
4 t.          Baking Powder
4             Eggs Separated and beat egg whites until light
2 1/2       Milk
4 T          Sugar
1/2 C + 2 T oil

Add Dry ingredients and stir just until Blended Fold in Stiff beaten egg whites. Avoid over stirring Bake in
Waffle Iron

Rachel's Syrup

1/2 Cup Butter
1 Cup Sugar
1 Cup Buttermilk
1 T Vanilla
1 T Corn Syrup
Bring to a boil and add 1/2 t Baking soda Boil 10 sec....Yumm

Laura's White Bread

5 Cups Hot Water
2/3 Cup Oil
2/3 Cup Honey
1 1/2 T Salt
2 T Sugar
4 T Saf Instant Yeast
Mix above in Bosh then add 6 cups Flour
While Machine is off add 3 T Vital Wheat Gluten Mix 5 min add 6 more cups Flour or until stops sticking
put into Loaves and let rise. Cover with Damp Cloth

Bake 350 35-40 min

Pumpkin Crunch

1 Package Yellow Cake mix                     1 1/2 cups white sugar

1-15 oz can of Pumpkin                           4 tsp pumpkin pie spice

1 can evaporated milk                               1/2 tsp salt

3 eggs                                                       1 Cup melted butter



Combine all ingredients except for the cake mix and butter.  Place in greased
9 X 13 Pan.  Sprinkle dry cake mix over it and drizzle with melted butter
Bake at 350 for 50-55 min.   Top with whipped topping and enjoy warm or
cold good with pecans on top.

Pie Crust

2    Cups All Purpose Flour
1     Teaspoon Salt
2/3   Cups Shortening
6 to 7 Tablespoons Cold Water

Cut Shortening into Flour till very small then add ice water one tablespoon at
a time divide and roll out

Banana Bread Yum

 Mix in med Bowl


  • 1 3/4   Cup Flour
  • 1 1/2    Cup Sugar
  • 1  tsp    Baking Soda
  • 1/2tsp   Salt
In Larger bowl mix

  • 2    eggs
  • 3     Mashed Bananas
  • 1/2   Cup Canola oil
  • 1/4   Cup + 1 T Buttermilk
  • 1 tsp Vanilla
To make buttermilk 

  • 1/4 C + 1 T milk
  • 1 tsp lemon juice
Let sit for a few min

Mix all in wet mixture and put into loaf pans cook 350 for 40min to 1 hour

Blueberry Buckle

3/4 Cup white sugar
1/2 Cup Shortening
1 egg
1/2 Cup Milk
2 Cups all purpose Flour
2 teaspoons baking Powder

1/2 tsp salt
2 cup fresh blueberries
1/2 cup white sugar
1/3 Cups all purpose Flour
1/2 tsp. ground cinnamon
1/4 cup Butter Softened

Directions

Preheat oven to 375 Grease one 8X8 inch pan


  • Cream together Sugar shortening and egg
  • In separate bowl Mix Flour, Baking Powder, salt
Stir into sugar mixture, alternating with milk.  Stir in blueberries.  Pour into 
greased 8x8 pan

Topping combine

  • 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter sprinkle over cake

Bake @ 375 for 25- 30 min

Homemade Granola

Combine together

6 Cups Oats
1 Cup Brown Sugar
1 Cup Coconut
1 Cup Sliced Almonds
3/4 Cup Wheat germ
1 tsp Salt
1 tsp Cinnamon

Then mix and pour over the above ingredients

3/4 Cup oil
1/3 Cup Water
1 tsp. Vanilla

Spread granola out onto two greased cookie sheets
Bake at 250 but watch for about an hour you just want it to be lightly browned

I like to stir Granola halfway through cooking

Cherry Almond Bars

1 Cup Butter
2 Cups sugar
4 Eggs
3 Cups Flour
1 tsp Almond Extract
1 tsp vanilla
1 can Cherry Pie Filling

Glaze

1/2 tsp Vanilla
1/2 tsp Almond
1 cup Powdered Sugar
2 T warm water

Cream butter, sugar and eggs, add almond and Vanilla then add flour.
spread 2/4 batter on jelly roll pan not greased drop pie filling on top and bake 350 for 40-45 min

Mississippi Mudd

Combine in Saucepan 2 sticks Butter
3 Tbls. CoCo
1 cup Water
Bring to a boil remove and add

2 cups Flour
2 cups sugar
1/2 c. buttermilk
1 tsp soda
1 tsp vanilla
2 eggs

Pour into 9 X 13 greased Pan Bake 20 min at 350 While cooking get icing
 ready

Put bag of Marshmallow on top

Icing

1 stick Butter or Margarine
4 Tbls Milk
3 Tbls CoCo
1 Box 4X Sugar
Bring 1st 3 ingredients to a boil remove and add 4X sugar Beat until Creamy
Pour over marshmallows let cool

Pumpkin Muffins

1/2    Cup Sugar
1/2    Cup Vegy oil
3/4    Cup Pumpkin puree
2        Eggs


In separate bowl

1     Cup All Purpose Flour
1/2  Cup Whole Wheat Flour
1tsp. Baking Powder
1tsp.  Cinnamon
1/4 tsp. Salt
mini Chocolate chips

In Large bowl, beat together the sugar, oil Pumpkin and eggs
Then add the dry ingrediants Bake 350 for 20 min

Blueberry Muffins

Cream together Lightly

1/2 Cup Soft Margarine
1    Cup Sugar
2     Eggs

Then add

1/2 C  Milk
1  Tsp. Vanilla

In a separate bowl

1 tsp. Salt
2 tsp. Baking powder
2 Cups flour

mix and add to wet ingredients stir in 2 Cups Blueberries and put in muffin pan and bake 30
min at 375

Mary Janes Chocolate Pie

4 Heaping T Flour
4 Level T CoCo
1 1/4 Cup Sugar
5 or 6 Eggs(save Whites for Meringue )
1 Can Evaporated Milk
1 Can Reg Milk
( Stir Before Cooking)


With the Coco flour and sugar in Pan (get lumps out) add yokes milks and start stirring and
Cook on Medium Heat - after it starts to boil add 1/4 stick butter and 1 teaspoon Vanilla

Trash/ chex mix

1 stick butter or Margarine
12 oz semi Sweet Chocolate chips
1 Cup Creamy Peanut Butter
12 oz Box Rice Checks

1 lb Powdered Sugar and a Trash bag
Mix melted Butter Chocolate Chips and Peanut butter, Pour over Cereal Pour in trash Bag
with Powdered sugar shake and enjoy

Pizza/ Pizza Sauce

9 Cups Flour
4 Cups Warm Water
1 Tablespoons Yeast or (1 package of yeast?)
2-3 Tablespoons Sugar

Dissolve sugar and yeast in water Gradually add Flour

Pizza Sauce

1 can 28oz Tomato Sauce
1 can 28oz  Crushed Tomatoes
3-4 Tablespoons Italian Seasoning
1 Tablespoon Garlic Powder
1 Tablespoon Sugar (I like more)
1 T Basil
1 T oregano

Bread Calzones

5 C       Warm water
2/3 C     Oil
4 T         Yeast
2 T          Sugar
2 T          Salt

Mix and Add 12 Cups Flour  Let rise for 20 min punching down ever 5 min

( pinch off round ball big enough to fill with below make sure to seal good)
Fill with 1 inch cheese and pepperoni place on baking sheet and let rise 20 min cook 350 20 min

Maple Rolls

2 1/2 C         Water
   1/2 C          Butter
   1/2 C          Sugar
   2   t.            Salt
   2                 Eggs
   4 T.             Yeast
3 1/2 C           Flour
3 1/2 C           Flour

Filling

3 sticks of Butter
2 cups Sugar
1/2 Cups nuts
1 teaspoon Maple
2 teaspoon cinnamon

Mix all for  rolls except for last flour with mixer
let set for 15 min. Now add last flour and mix till smooth.  Let set 15 min
While waiting melt butter for filling and add other filling stuff
Bring to a simmer and then keep on lowest stove setting
Divide dough into 6 parts and grease 2 large pizza pans (16-20 inch)
Roll one part dough into pan size and place on pan
Cover with 1/4 filling and add another rolled out dough, then filling and 3rd dough Mark circle in center with glass.  Cut about 15 lines from circle to edge of pan
Twist each attached triangle twice around and replace.  Rise 15 min.
Bake 20 min at 325
Frost with maple and cinnamon flavored glaze

Whole Wheat Bread/ Jean's

Add to Kitchen aid or Bosh mixer

  • 4 C             Very Warm Water (130F)
  • 1/2 C           Honey
  • 1/2 C           Canola Vegetable Oil
  • 1 T               Salt
  • 2 T               Moos Milk Powder (optional)
  • 2 T               Wheat Gluten
  • 4 C               Freshly ground hard winter or spring whole wheat Flour
  • Mix on Speed One for One Minuet, then add

  • 1 1/2 T         SAF instant Yeast
Mix on speed one for one more minute, Cover mixture and let rise for 30 min... This is called the sponging stage.  The mixture will be soupy and should double in size.  After 30 mins. remove lid turn on to speed one and begin adding flour one -half cup at a time ( approx 4-6 more cups).  When dough begins to pull away from the sides ( around the 8th or 9th cup), turn off Bosh and do the floured finger test...Dip your finger in flour and quickly poke the dough . If any dough sticks add a little more flour and mix... When your finger comes away clean, you're through adding flour.  If you touch the dough it will be sticky! This is ok adding too much flour is the main reason most people have heavy bread!

Turn on speed two for five to six minutes (with lid on)

After 2 or 3 minutes if there is still alot of dough sticking to the sides, add another 1/2 cup of flour.  Continue kneading for 2-3 min. The dough should "move"  once the mixer has stopped.  YOu should see strands of gluten throughout.  Add oil to your hands and remove the dough from the bowl... the dough should be light and very pliable.  Form Loaves and place in "greased" Bread pans.  Place pans in warm oven ( 100 f) Let rise till double in size about 30 min.  Turn Oven on 350 F Bread will finish rising as the temperature increases.  Bake for 30 more min or until done.


Sweet Rolls/ Cinnamon Rolls

  • 2 cup Lukewarm Milk
  • 1/2 Cup Sugar
  • 2 tsp. Salt
Mix above and add
  • 2 Tbls yeast
  • 2 Eggs
  • 1/2 Cup Oil
add to above and start adding flour 1 cup at a time until dough starts to pull away from the sides about 7 to 7 1/2 cups of Flour...Let Rise for 1/2 hour and make into dinner rolls or Cinnamon rolls

Whole Wheat Pancakes

2 Cups           Buttermilk
1/4  Cup         oil
2                     Eggs

Whip together in separate bowl

In next Bowl add
1 1/2          Cups Whole Wheat Flour
1 Tbls.       Baking Powder
1 tsp.          Soda
1/2 tsp.       salt
Mix and add wet ingredients cook until golden brown

Syrup
2 Cups        Sugar
1 Cup          Water
1 tsp.            Maple Flavor
Heat on medium until boil
